The latest addition to my diet has been Marinated Artichoke Hearts. A superfood by all accounts, and plenty of uses.
I can eat them for lunch, by themselves, or make a salad for supper.
Artichoke Hearts and Hearts of Palm Salad:
Greens
1/2 cup Artichoke hearts, drained
1/2 cup Hearts of Palm
8 oz cooked shrimp
4 oz. Cherry Tomatoes
Beets
1 Avocado, cubed
Vinaigrette dressing
Capers to garnish.
