What are you eating right now?

The latest addition to my diet has been Marinated Artichoke Hearts. A superfood by all accounts, and plenty of uses.
I can eat them for lunch, by themselves, or make a salad for supper.
Artichoke Hearts and Hearts of Palm Salad:
Greens
1/2 cup Artichoke hearts, drained
1/2 cup Hearts of Palm
8 oz cooked shrimp
4 oz. Cherry Tomatoes
Beets
1 Avocado, cubed
Vinaigrette dressing
Capers to garnish.
 
I went out for lunch in Niagara on the Lake today and had a really yummy grilled cheese sandwich on sourdough bread 😋

Tinned fishes (sockeye, yellowfin tuna, sardines), hunk of tofu. Kraut. Multi lettuce arugula salad with EVOO, couple vinegars and hemp hearts and later hair on top*

* I add the Parmesan later as Mr Hairgripe might come back.

Maybe a few grams of carbs, but BG mostly goes down after I eat similarly these days.
Has the tofu been cooked at all?
 
There's no rhyme or reason to a lot of what I eat. So far today, sliced turkey deli meat on whole wheat bread for breakfast, Ramen noodles for lunch, some cantaloupe and a handful of granola mix for a snack, and several pieces of peppermint candy. I'm a grown up; nobody gets to tell me what to eat.:p

Eat what you want. Despite my rants and raves and joking and scolding I don't care if your gizzards turn black and fall out and you croak a screaming in agony death and no one shows up at your wake because you didn't listen when everyone told you; "...you eat like a child..."

Seriously I don't care. It's interesting what others eat frankly. A lot of it is "I wish I could eat that!"
 
I'm in the "eat low residue foods" phase to prepare for a colonoscopy. Grits were on the approved list so I made some to replace my usual shredded wheat this evening. I saw "My Cousin Vinny" so I knew better than to get instant grits but I think Mr. Tipton would still give me the side-eye because I microwaved them. Came out fine IMHO.
