I posted the wrong image earlier. Still getting used to imgur. Here's the postmortem picture:I have autopsied the plain-looking gingerbread. Appears to be 50% sugar, and 50% ground nuts. I taste almonds and hazelnuts, maybe walnuts? There is finely chopped citrus peel in there. Gingerbread spices, predominately cinnamon, clove, mace, cardamom, vanilla, maybe ginger. I taste booze, probably rum. No flour as far as I can tell. What holds the dough together? Egg or egg whites would be my guess because of the texture, taste, and smell. The dough is probably more like a batter because it's applied onto a thin wafer. One gingerbread weighs 40 grams. If it's 50 percent sugar one gingerbread has about 20 g of carbs plus maybe 8 more carbs from the nuts and citrus peel. I'll be eating half of one every day. I'll keep the chocolate-glazed ones but will give the sugar-glazed ones to people I don't like..
