I have autopsied the plain-looking gingerbread. Appears to be 50% sugar, and 50% ground nuts. I taste almonds and hazelnuts, maybe walnuts? There is finely chopped citrus peel in there. Gingerbread spices, predominately cinnamon, clove, mace, cardamom, vanilla, maybe ginger. I taste booze, probably rum. No flour as far as I can tell. What holds the dough together? Egg or egg whites would be my guess because of the texture, taste, and smell. The dough is probably more like a batter because it's applied onto a thin wafer. One gingerbread weighs 40 grams. If it's 50 percent sugar one gingerbread has about 20 g of carbs plus maybe 8 more carbs from the nuts and citrus peel. I'll be eating half of one every day. I'll keep the chocolate-glazed ones but will give the sugar-glazed ones to people I don't like..

The dough is granulated and moist/chewy while the outside has a light and dry crust. You can make out slightly larger bits of nuts and citrus peel if you look closely. The glistening is due to high the high sugar content and the trapped moisture. Meanwhile, my wife walked by and snatched my gingerbread off my plate.

I attended a Christmas dinner. I had a slice of pizza, chicken marsala, and a piece of chocolate mousse cake, and an espresso because it was someone's birthday. Terrible picture quality. Bad lighting, clutter everywhere, I did the best I could which wasn't much.

I felt welcome right away
