What are you eating right now?

Refried Beans 4 eggs on 1/2 ciabatta roll.

Dinner - Vegetable Smoosh
I make this when I don't want to cook. It's simple, healthy, and I find it tasty. I'll microwave a potato or two (usually Yukon Gold) and add some vegetables (whatever's handy - there's always frozen veggies available or some in the fridge that needs to be used), mix them with the potatoes and some onion or leek and garlic sauteéd in olive or avocado oil, finish them all in the microwave, season, add some freshly grated cheese (this evening was a Wisconsin Parmesan) and just mash everything together. On the side, I enjoyed some carbonated water with freshly squeezed lemon added.

Thanks to you they were cold when I got around eating them just to please you! LOL just messing with you they were good.
You might be related to my Wife- she always comments about my actions right before a meal resulting in food getting cold.
