Is there a chart that plots viscosity vs. temperature in SAE only. I'm wondering where the viscosity would be at a temperature at around 140 degrees.

You set whatever temperatures you want. Then you’ll have to find out what SAE grade that viscosity falls within. But to be clear, the grade designation is determined at a specific temperature.

years ago machinery lubrication had a chart showing how the same viscosity oils actual "thickness" in centistokes varied. in a nut shell REAL synthetics thinned a bit LESS at high temps, BUT they "thickened" a lot less at 40C aka 104F where the cold spec is given!! REAL synthetics are different!!
