Sausage: what to cook with it?

I buy Johnsonville Hot Italian sausage remove the casing and fry it up drain it and put it in spaghetti sauce (we like Prego Traditional for this).

I also put it in Zatarain's red beans and rice or their Gumbo Mix or Jambalaya rice mix.

Pardon my ignorance here but I have some sweet hot and regular real local lump/loose sausage. Wondering what to cook up with it. I have beans, rice and other foods.

Jambalaya and/or gumbo.
