preventing interior off-gassing

Is there any way to prevent or minimize interior off-gassing in a car. My sister-in-law has a 2021 Buick Enclave. She's a non-smoker as are we. We recently used it to haul a bunch of stuff from Kansas to Ohio. The inside of the windshield was filthy when we started and she said she had just cleaned it and cleans it a lot. It took some serious scrubbing to get it clean enough for the trip (used lots of windex and paper towels). We arrived in Ohio two days later and the glass was already getting those foggy/greasy streaks all over it. Before we left I scrubbed it down with Sprayway and clean cotton towels. It was crystal clear when we left. By the time we got home it was starting to fog up again! I have never seen this happen so quickly. It takes weeks/months to happen in my Mazdas. The Enclave does have a huge dash. It has to be close to 18" deep so there's lots of plastic exposed to the sun. Are there any sealers or products that can safely be used on a dash to prevent this off-gassing? For that matter, are there sealers that could be used on the inside of the windshield to make this stuff easier to clean off?

No not really. You can try and let some of it out by keeping the windows open a bit, or wiping down the interior.
 
I suggested that she should leave the windows cracked when in the garage. I would have thought after 3 years since new that it would have subsided by now. Would a interior detailer sprays seal the plastic somewhat or just make it worse?

First off don't use windex, as the blue stuff isn't formulated to deal with vehicle grime and off gassing. I use Invisible Glass, Sprayway which is commercial glass cleaner available at grocery stores etc, or Adams Car Car glass cleaner (Smells like lemon-lime kool-aid) with automotive waffle weave glass towels. Second wipe the dash to remove dust, then use a semi-gloss dash protectant. Third I also use invisible glass anti fog treatment on my inner windshield.
