You're overthinking this. What viscosity grade is recommended? I can only look up the North American owners manual (picked a 2018 Mazda 6 since it has a SkyActiv 2.5) and it recommended 0W-20 in the US/Canada and 5W-30 in Mexico.
If you're changing it at manufacturer's recommended intervals then there's really not much of a benefit to trying to get "the best". Right now I'm using the cheapest "brand name" 5W-20 in my wife's Honda Civic. I wouldn't even worry too much about the heat, as long as you maintain your cooling system properly. If I were to guess, your owners manual probably indicates using an ILSAC (GF-5) 5W-30. Use that, monitor for oil consumption, and change it the way you're doing now. You'll be fine even on Motorcraft. Unless you have some specialty application I'm not sure you need to worry about it.
