There is a supplement to your Ford owners manual for the Mach 1, whereby it requires oil changes every 4hrs of track time. This is because the oil will shear with track use. Always START your track days with fresh oil, but if you want to add a little street driving after, that's fine (assuming you didn't breach 4hrs at the track). However, remember that the oil in the sump after a track day is going have noticeably sheared, and you will want to change it sooner rather than later. I would not go 5k miles on track day oil, I wouldn't even go 3k miles.
Last I checked, the later model 5.0 performance pack Mustangs were recommending 5w30 for street and track. Assuming oil temps are kept reasonable, is there a particular reason you want to use a 5w50?
As for whether you "need" 5w50 Supercar, I'd say no. I don't need it either in my Gt500, I use it because the oil interested me. However after viewing numerous UOA's from people who track their GT500's with other 5w50 oils, I can't say Supercar is any better or worse. Motorcraft 5w50 also does well at the track, assuming one changes it every 4hrs as recommended.
