I ate this yesterday and it was really good.
Onions, peppers, garlic, ginger, broccoli, yellow squash, peas, fried in coconut oil, and pre made store bought meatballs.
When it was done frying I added almond milk to create a sauce.
I'm such a good cook.

See no need for almond milk or (specifically) coconut oil, but could use more carbs whether more peas or some noodles or rice, and some hot sauce if the peppers weren't enough to give it a kick by themselves.

Do you have the link to the recipe? Definitely looks like a must-do.
I seldom use recipes. I just cooked it as I explained.
I just use my imagination and use the whole foods I like to eat.
You make make a vegetable stir fry using any vegetables you choose.
You can also add rice, beans, and other foods.

And BTW, I've been doing IF / Intermittent Fasting for going on 3.5 years.
I only eat during a 2 hour time frame, then I'm done for the day.
This helps me to limit the amount of food I eat.
Otherwise I'd weigh more and have a bigger food bill.
Then I just drink water for 22 hours.

I like to use coconut oil and ghee for stir fry and to flavor foods.
I probably overdo fats sometimes but I believe coconut oil and ghee do me good.
Some people are on no oil vegan diets and they stir fry foods in broth but I find that boring.

I ate pre cooked yellow potatoes with it, and sweet potato muffins.
I eat lots of potatoes. Some days I eat almost nothing but potatoes.

How many calories do you get in in 2hrs
Are you still cutting or just maintaining weight. Two hr feed sure seems short and are you working out at all.

I don't count calories, I just feast and then fast.
My weight is very close to where it should be.
I walk a lot but I don't work out.

If it works for you excellent on your part still be curious in that total calorie intake in 2hrs guess it would be on what diet primarily consists of daily.

They taught me to not count calories or macronutrients and to just eat a balanced diet and go by how we feel.
I eat plenty but I don't stuff myself.
I don't eat the whole 2 hours. A lot of that time is used to prepare and cook my meals.
If I get belly fat, I can often get rid of it by reducing dietary fats, oils, etc.
A little healthy fats are good but overdoing fats will add to my waistline.
I love my carbs.

Almost nothing but potatoes for two hours then fast for 22 hours?

I would move to a part of the world with better food supplies. Or grow my own. Or both really... but whatever makes you happy...

Keep in mind that nutritional deficiency is a real thing, pretty much a certainty if you don't vary your diet more.

Have you read the Potato Diet Hack by Tim Steele?
I'm on his forum and I have 2 of his books.
I eat a lot of potatoes but I seldom eat only potatoes. It wouldn't hurt me if I did.
People eat potatoes for days, even weeks and months and they thrive.
I'm talking white, red, and yellow potatoes, not sweet potatoes.

Pre-made meatballs are a great idea. I use the frozen so I would microwave and then throw in the wok. I normally use chicken, beef or pork. Sometimes I replace meat with red, black or white beans or mushrooms. Sauce is always soy with a little corn starch to thicken. Always on rice.

Do you eat the potatoes raw?
Do you eat the peel (the only part with nutrition)
Do you only eat purple potatoes?

If not your getting minerals only.

And sweet potatoes have all those things in nutritionally significant amounts
plus vitamin A and a lower glycemic index with more fiber.

Most Men get too much iron in the diet already and need to donate blood regularly to avoid heart disease.

There really is no magic bullet like eating just potatoes, a calorie reduced diet and intermittent fasting does it.

Poorer Asians many times eat 99% rice , they survive but are genetically better suited than other races for such a diet and get exotics in their diet westerners are never exposed to.

I would view a rice only diet no differently than a potato diet, both avoid common anti nutrients (though niteshade has damaging compounds rice does not)
but are mostly empty calories that after years would result in deterioration and imbalance.

You are also likely getting excessive nitrate/nitrite loads which has its own problems.
