My Plant Based Vegan Food

I am all for a plant based diet. You are what you eat. Since cows eat corn and grass, they are plant based food.

Just kidding! That actually both looks and sounds good!
 
I’ve tried a few plant-based meals, and some were surprisingly good. Texture can be tricky, but seasoning makes a huge difference. Do you make everything from scratch or use store-bought options?

I've had to learn how to "Veganize" foods that we were so used to our whole lives & to keep costs down. Now I have a Google sheet full of recipes of our own style (continue to add, continue to learnj). To answer your question yes we do buy plant based alternatives still. There was an era where that was pretty much all we bought, premade vegan pizzas, etc but that can be expensive & not the healthiest. I've been on a kick lately to just do the basic homemade foods.

Got a bunch of brussel sprouts last month from the food bank & decided to try something w/them.

Boil them in a pot of water to soften them up.
Put them in a bake pan.
Then fill the pan with green enchilada sauce mixed with avocado salsa you can buy both from Walmart.
Bake at 350 or so until you feel they're done.

Great thing about food is the sky is the limit. Try anything you want.

Daiya cheese sauce (buy at wm)
unsweetened Oat Milk/Soy Milk (Almond milk when we're running low on funds)
Hellman's Plant based Mayonnaise (Although I prefer the Just Mayo brand it is harder to find after they got into trouble with their investors).
There are just too many to list & one thing I've learned is there are more options coming online all the time and some items go in or out never to be seen again. There's a discount food store in our neck of the woods & so long as your careful on the expiration dates we can find the premade vegan options for far less money. Wife found some vegan "Jerky" and surprisingly they were real tender & not too hard for me to chew up where most are. Do you have local options like that?

Surprisingly there are 101 ways to use rice as a basic stable for all sorts of plant based "Seasoned" foods like you mention.

I made vegan croissants, I used Myoko’s vegan butter and aquafaba for the wash. It worked out well. A vegan friend was cooking for a potluck this weekend, I kept her company while she tried her hand at vegan pate and marinated tofu for banh mis. They were good.
 
I found these plant based options at the local discount store. The poached eggs were interesting. Never seen anything like that before. It actually kind of smelled like an egg too. Chowed it down for breakfast. 🍳

We're going to have our 5 yr old daughters 6th B-day party at Pizza Hut on the 28th. We are having a cake made for her but it's dairy ingredients so we grabbed these two plant options for us. Problem is I've already dug in! 😄

Always get a chuckle when some of these companies share some real life events. Look at both "Did you know" on the back of each box.

Nothing screams earth friendly more than factory made, transported, store sold cupcakes than those in a plasticized coated box with clear plastic window and short ingredient list.
 
Since I invoked the vitamins I thought I'd update. These are <$10 on Amazon. Mainly the B12 is sourced from plants not animals.

While shopping we snagged some chips. The Nachos do have some heat but they taste good.
