I miss Ma's Pasta!

My mother passed away way back in 1986. She was from the east coast...and an old-school style cook.

She made wonderful food for our family. Her manicotti can still be tasted on my tongue when I close my eyes! She made so many different dishes that I miss to this day. Eggplant Parmesan, Spaghetti and meatballs, and about fifty other fantastic dinners (in various ethnic examples).

Yep...those days are long gone. Most modern women haven't a clue. They think it almost an insult at the simple suggestion that a woman should know how to cook great meals. Feminists really dropped the ball on that aspect of womanhood.

Well, my sister has most of the recipes in her head. And my wifes sauce(like her Mom's) is equally as good(though slightly different) than my MOM's. I guess that I just miss MOM more than her sauce. She's been gone almost 23 years now!

Due to health reasons(coronary artery disease) , we don't make the sauce that same way anymore. We don't put in all of the red meats & pork and hard boiled eggs that Mom did! So now, I eat more of my paste with just olive oil, garlic & basil/parsley(fresh when I can). Maybe with some escarole! I eat lots of greens & beans!

Any good Italian would practically VOMIT after eating in that place.
