Homemade red beans and rice with carrots

Been cooking most the day today so cooked up real red beans, wild rice and fire roasted tomatoes and some fresh carrots thrown in. Some red pepper flakes, pepper, and some McIlhenny brand hot sauce. Girlfriend approves too 👍🇺🇸🇨🇦

We had a traditional southern New Years meal. Cooked dried black eye peas, fresh collard greens, smoked sausage and baked cornbread (not the boxed mix).

sounds great. Girlfriend caught me using a cornmeal mix she’d kill me

It's one of those things that tastes way better than it looks. Since I eat fairly low carb meals I'd have this as a side with some chicken or I'd put a lot of cubed beef in there.

Well, that's a different approach on how I have seen red beans and rice made. (y)
Here in La. we eat red beans and rice on Monday. I have no idea who started that tradition.
I make mine with Andouille sausage, Savoie's smoked sausage, with a ham hock or 2 thrown in there, onions, and green onions. Served over white rice with a few drops of Crystal hot sauce. Oh, and don't forget the corn bread. C'est Si Bon, mon sha'!
 
I’m sorry but that is another thing I don’t like. My parents had corned beef and cabbage today and I didn’t because I won’t eat that either lol. I’m sure it was great though for you.
 
Good meal. I eat mostly a plant based diet. Do you?

I eat a lot of gold and sweet potatoes, other vegetables, legumes, some whole grains, fruit, and nuts and seeds.
Also eggs and I eat fish 1-2x a week.

Mainly Chinese food and steaks and guacamole the only three types of food I never tire of lol. I won’t eat anything with beans in it 🤢. I will eat chicken and Mexican food too.
Just FYI, beans are one of the healthiest foods in the world.
They're tied to a long life span more than any other food group.
I could go on and on about beans but I won't.
