My car has always been brutal to start so today I pulled the throttle body and idle air control valve>

The IAC was a little sooty but tested okay for resistance, the service manual said 40-60 ohms and it was right on the button at 50. I cleaned and reinstalled it, and the throttle bore and throttle plate were basically clean. Very little material on it, basically just varnish, and nothing that should impede operation.

I have had my scan tool hooked up to it and it shows all sensors reading properly from cold to hot.

What's the next place to look? I don't have any fuel starvation issues at full load, so I don't think it's fuel pressure related. It's always started this hard, even with new plugs, but I am going to Denso Iridiums to see if it helps.

Also, another thing is the engine fires easiest in extreme cold. I can turn the key and it barely turns over before starting, it's like striking a match.

Ideas? The engine is a GM 3100 V6 (LG8) and has been this hard to start since we got the car at 25,000 miles.

what year is it and what's its history? is there a chance that you have a fuel injector that is leaking down when stopped and flooding a cylinder or more?

Could be a vacuum fuel pressure regulator.
Or a coolant sensor that is not in range.
First, you have to determine if it is fuel or spark that is bad when trying to hot start it.
If a shot of starting fluid makes her start right up, you have identified which system needs attention.

I thought it was a coolant sensor myself until I hooked up an OBD-II tool and it shows the ECM reading ambient at cold start and climbing steadily to 204 F when the needle hits the middle of the gauge.

Sure sounds like a fuel problem with that instant start when cold but not hot thing going on.
Bad MAF or MAP sensors can also do this.
First double check all vacuum lines and intake connections -esp the WHOLE PCV system. Any leaks nowadays make measured metered air flow cars run poorly.
