Same as chard. It this case red chard. Bitter when raw, not bitter when cooked.
Looks like what we call silverbeet...we've got some "heirloom" multi coloured varieties to grow this year (kale is already in, and we've still got some silverbeet survived so far.
I usually put a layer of blanched silverbeet in Lasagna.
Fresh produce makes all the difference. Local Italian place near me called "Femmina", has a garden out back where they grow and use their produce. Very good quality and reasonably priced. Owner is always going back and forth to Italy and brings back local dishes.
