Your car sounds great - they are excellent performers!
As to your choice of lubricant - the Motul V300 range are not Approved by any German engine maker to my knowledge. Motul make excellent products that do have various Manufacturer's Approvals. I have used these with about average results

So the R has a differently tuned version of the 2.0 turbo? 270hp? Similar performance can be had with a chipped GTI. I guess the main advantage of the R is AWD. Are there any other differences?

AJ - OT - This was the engine in the SEAT Leon that I spent some time at the Nurburgring's Nordschliefe with. They do perform very well and the 210kmh (130mph) cruising on the Autobahns is delightful
The SEAT and Skoda rally and race cars are the "test beds" for the hot Golf releases of course and vice versa. This applies to suspension and chassis tuning too

yeah detuned to 267BHP but have done APR Stage 1 with carbonio intake

Great oil. It's not VW/Audi approved but I wouldn't sweat it too much. It can stand up to a lot of punishment, but I wouldn't run it too far past 5,000 miles. Get a UOA at the next change.
you could try running the Motul Specific. It's a Motul oil, and it designed to meet VW oil requirements.
I distinctly remember labman saying not to mix ester oils.
