Bean & Noodle Soup

I saw Bean & Noodle soup served at a place on the show Triple D and thought I would try it. Only beans in the house were red kidney (Navy used in the show), so I used those and wide egg noodles. 1/2 chicken stock and 1/2 milk with salt, pepper, and garlic for the base, cooked the beans until al dente and then added the noodles. Tastes pretty good, but not a "I'll make this once a month" dish for me.

Anyone else make Bean & Noodle soup? Any hints or tricks?
 
Good stuff. Make your own chicken stock, Makes all the difference.

Save and clean all the bones from a roasted Chicken.
Roast them in the oven with a light brushing of tomato paste.

Then make stock as usual and pour the stock thru Cheesecloth in to a container.

As far as beans go, I prefer cannelini beans.

For pasta, I use orecchiette.

Add a little grated romano on top when serving.
