When cutting chili peppers. Don't rub your eyes! I know - DUH.

I'm making some salsas for New Years, one with Anaheim chilies - relatively tame chilies. I diced one up, then proceeded with a diced red onion. The onion starting blowing me of my chair, upon which I itched my eyes with my hands, which were covered with fire from the Anaheim chili.

I've made the same mistake with jalapenos and it wasn't this bad. Never been pepper sprayed, but this has to have been close to it. Dunked my head into cold water for 10 minutes and my eyes are still on fire! I literally couldn't open my eyes for 10 minutes.

chili oils are not soluble in water, you need to use something with an organic (fat) content. Not sure how that is on your eyes though...

whoops! My boss did the same thing a month ago.
 
I thought about pouring a gallon of milk over my eyes! I can't believe it was an Anaheim that did it, but the red onion I cut open was about the most powerful onion I've ever seen.
 
I'll never forget when I learned this lesson. I was in the middle of a hot (and I do mean hot) wings competition when I realized I needed to make room for some more bud lights... Well, let's just say since then I remembered to wash my hands both before and after attempting to use the restroom.
 
Oh I've done that before. I don't know what feels worse than that needles-in-the-eye and eyes closed shut feeling. It's pure tortue. I bet you'll never make that mistake again Drew. Once burned twice shy I guess.
 
This reminds me of a time I was eating nachos and cheese with pepper rings in the cheese. In the middle of swallowing a bite, I hiccuped, and a small piece of chewed up Anaheim chili pepper got snorted up into my nasal passages. Not only were tears streaming down my face, but it was absolutely impossible to open either one of my eyes for about a minute.


To this day I still find it odd that we can eat something that the police use in concentrated form to subdue drug crazed criminals.

my worst ever chilli moment was making a smoked chilli sauce, with birdseye cillies.

Never ever used gloves when cooking with them, anddidn't this day.

Smoked about 2lb of them, then was deseeding them and removing the membranes with my fingers....no probs.

Mixed them with tomatoes and put on stove to boil...no probs.

Canned them, again no probs.

Washing up no probs...until my hands started to dry out, and became "tingly", which increased to irritated, then painful, followed by excruciating like I'd dipped them in molten lead.

Tried to wash it off with dish washing liquid (neat), which spread it up past my wrists.

Couldn't think, let alone drive... we went to In Laws that night for tea, and I had my hands out the passenger window for the whole trip.

Wrapped them around an ice cold mug of beer, and that was the only relief for 24 hours.

Next three days, they burned/tingled for a half hour after washing.
 
I was serious about the wiping part, I had just tried a Habanero for the first time. Went to the restroom, no man should suffer as I did.
