The 10W-30 would have a thicker base oil and for that reason would need fewer/less viscosity improvrs, would shear less than a 5W-30. The 5W-30 would have a thinner base oil but more viscosilty improvers and would have the higher cSt because it is going to shear more.
If I were going to use a 30 grade oil, it would depend upon at what mileage I was going to change oil and the mileage now on the vehicle. If you are going to change oil at 4000 miles or less, I would go with a 5W such as Mobil 1 or Amsoil ASL. More than 4000, the 10W, but the highest 100C cSt synthetic 10W I could find. I would recommend Amsoil ATM.
If you already have 75,000 miles or so, I don't think you can beat the Mobil 1 10W-30 High Mileage.
