0W is for the colder?

On the the label:

Mobil 1 5W30 - "pours at -45 C"

German Castrol 0W-30- ".. allows for unaided engine starts down to -40 C"

Esso XD 0W-30- ".. start ability and pump ability to -40 C"

Why the colder number for the 5W over the 0Ws?
