I've had them at the Roy Rogers Fixin's bar and there is Peruvian place here that makes an onion salad with them, but when I get one from the supermarket, they are much too strong to eat raw. What am I missing?

If the red onions that you like are crisp they may have been soaked in ice water to 20-30 minutes. If they are soft they may have been soaked in vinegar and rinsed with water to remove the vinegar taste.

I like pickled red onions. But you could soak them in water.
These are real good on the side.

Here in the valley they grow big and small red onions, the small ones are very strong almost like eating a chili pepper, the big ones are nice and crisp with a mild flavor, I have eaten them like eating an apple, really good in a tomato and onion salad. ;)

Wait, there's still a Roy Rogers around somewhere or are you a time traveler posting this from 1987?
