I find sirloin is CHEWY if cooked to rare. I like rare steaks that eat well prepared that way but I like my sirloin cooked closer to medium.Definitely not over cooked. When you buy hanging beef in the USA, 1/4/, 1/2, full, it's personally butchered at a USDA inspected location, but said butcher is charging a fee, and the animal seller (farmer/rancher) is actually selling you the meat (separate check in this case).
