You are correct. They are different by definition.

When I add cacao powder, it melts into (unsweet) chocolate so technically I did have coffee with chocolate.

The amazing thing to me is how much cacao powders differ. Some melt into lovely molten pure chocolate. Others don't seem to melt. Just go into suspension in a chocolatey way.
