I'm having a piece of quince-strawberry pie that was given to me. Tart rather than sweet and the way I like it. Proper shortbread with a lot of almonds.

Quince tastes like quince. Sort of an apple and citrus flavor. Quince goes well with apple, pear, and strawberries. If you mix quince and apples you probably don't need to add pectin which apples contain spades. You can just use a small amount of sugar because Quince isn't all that tart Quince is one of my favorites for preserves. Great with pancakes.
