Wife made some sugarless banana bread. It's not bad! Almond flour, no fake sugar, etc. Ok OK it has some chocolate chips in it. I had a small piece with my coffee. Ha!
This is an all but the kitchen sink type deal I make quite often. I prefer rice or potatoes with my eggs over toast so used leftover rice, peppers, onions, and arugula. I like all vegetables and it's a good way to use up leftovers or something that's soon to go off.
The rice and veg gets cooked out in olive oil and chicken broth, then as the starch in the rice pulls it all together and tightens it up, I form it out flat and pour in liquid egg whites as the binder and then crack an egg in the middle.
Lid it and steam on low so the rice doesn't burn or get to hard on the bottom. Takes about 5 minutes,
then I hit it with Sriracha and Hoisin and go to town.

Chinese food. Yummy . Parents surprisingly got Chipotle. They gave me the choice and I said Chinese food because Chinese is always first on my list Chipotle second plus I had that last night. Man this is good. Teriyaki chicken with vegetables, rice and a pork egg roll.
