There is a restaurant in Omaha, Nebraska that specializes in serving carp which by many is considered inedible. They claim to have a special method of "scoring the fish" to let the small bones cook away. They have been in business since the 1930's. Diners, Drive Inns, and Dives made a visit to them a while back. My brother who was quite the fisherman in our youth made a strawberry-banana dough ball recipe to catch carp, more for the sport and release than eating them. To each his own.

It's called Joe Tess and they use farm raised carp and is some of the best fish I have ever had, in fact my wife has an appointment in Omaha in a couple weeks and we will be having lunch there. They're famous for their rib dinner, if you click on the link you will see a pick of the 2 piece rib dinner. One of the condiments that is on all the tables is Trappey's Red Devil sauce.

Back in the late 60's there were a couple other bars just up the street that had the same rib dinner, I remember my grandpa going nuts over it, I can still see him splashing on the red devil with a Falstaff :)
