Have a sirloin tip roast on the Traeger. Picked fresh carrots and celery for some veggies. Likely some potatoes are ready to pick but I can wait until mid month when we return from our trip.

The carrots are small as the variety seems to take a while to fill out and the seed viability was garbage. Maybe 10 to 15% took off. I replanted early July with some new seed and should get something end of month....

Got busy with chores so I was a bit late getting it off the grill but it was amazing. The key is that overnight dry brine with sea salt. 225F until 120 internal and 300 to finish.
