Just made a bowl of salsa fresca. Gotta get to the store and buy more tortilla chips and limes.
Stuffed peppers
Avocado, 2 over easy eggs with sweet peppers, onion and some shredded cheese on it. Ice water
Meatballs!

Eeel intestines coming up. I'm generally not squeamish but this is a bit much. Picture later.

Eel intestines have a more subtle flavor and delicate crunch compared to mammalian intestines. I used to eat jellied eels in the UK so I was a bit prepared.

Chicken salad sandwich from another Costco rotisserie chicken. Can't take a picture cause I ate it. Altogether disappointing, though, as I messed up and added salt to an already salty bird.
A couple fake Hungarian meatballs with Gorgonzola
Already consumed: cabbage roll and real mashed potatoes at American Legion. Best darn $3 ever spent
More of a boat. Years ago I went from stuffing peppers to making boats. The advantages were a larger surface area for the cheese topping and more stable peppers. So where's the browned cheese topping?

Meal was about expediency.
Is that browned cheese a requirement? Plenty of cheese inside.
Could have used a touch more salt but otherwise flavorful. The caraway seeds gave them a nice flavor.
Crab stuffed salmon with asparagus and a nice Californian sauvignon blanc
The salmon was purchased ready to throw in the oven and asparagus is pretty easy. I even accidentally steamed it correctly leaving it with some crunch and not totally limp.
