Alot of people screw up Pork Chops they claim the are dry and tough. One answer you simply overcooked them that's it and no they do Not need to be Brined.
Thick Chops I prefer grove Charcoal sear hard both sides without the lid on pull from grill move coals to one side and place Chops off fire side and lid the grill to roast to doneness.
Flip 1 or 2 tmes you will see them starting to wet up juice runs clear off them pull them amd rest.

Just made a simple potato salad with Yukon Gold potatoes and a Dijon-Champagne vinegar-shallot dressing using Kampot black pepper and a hint of ground Kashmiri pepper. I supplemented the salad with a small baked and broiled chicken thigh marinated in a honey-Dijon-yogurt dressing. The whole thing took just about 20 minutes to throw together.
This was from an older, more conventional dressing that I modified based on mood and ingredients.
