Made a pound of bacon, and round two of quiche with andouille sausage and gruyere cheese…

Toast with vegemite, 2 over easy eggs on top. Thermos of 8 o’ clock Colombian coffee too. Gonna be a record high of 32F today. Oh boyyyuy!!!
 
Two eggs, scrambled in a bowl…….mix in salt, pepper and hot sauce.
Pour into a small, seasoned, cast iron skillet. Cooked low and slow in bacon fat.
Flip once, then fold in half and then half again.
Place over a lightly toasted English Muffin.
Top with a nice slice of Sharp Cheddar Cheese.
Wash it down with a nice cup of Black-Rifle Coffee…… 😋
