What are you doing right now?

I'm sitting here thoroughly disappointed in the sirloin tri tip I cooked on the pellet grill earlier. I cooked it at 225F until it hit 130F internal, then loosley wrapped in foil until my grill heated up to 450F (5 minutes or so). Then I seared it for 90 seconds per side. I took it off the grill and let it rest uncovered for 15 minutes. I cut it in half where the grain changes direction and sliced both sections across the grain. It had a good flavor but was chewy as rubber. I don't know what I did wrong.

Could have just been too lean

Could have dried it up

225°F is above water boiling for low slow I go 200-210° max

Or just a nasty old cow

Not sure. I watched a bunch of videos on how to do it and followed all the instructions, so who knows. I can cook delicious steak on the charcoal grill and an amazing pork butt on the pellet grill, so I don't think I'll be attempting tri tip again. The end result sure as heck did not justify the price of the tri tip.

Frankly I’ve never understood the tri-tip hype. Especially when years ago price went through the roof

A little reading suggests maybe the cut I got was hopeless from the start, as it was "Sirloin Tri Tip". 🤷‍♂️ I've got a bunch left over and have been researching ways to salvage it because I'm not throwing out that much pricey meat. The best way seems to be re-heating the slices slowly with them covered with beef broth.

It is from the sirloin primal so that is correct but maybe not the true lowest portion. How big was the fat cap?

I like the other end, the cap, aka rump cap or picanha or coulette pick your language. Better flavor easier to cook

My mom made tri-tip way back the 1960s when it was a cheap cut. Marinade for a day. Sometimes kinda chewy!

I'd probably just cube it and stew it make some beef tips over potatoes or something.

If it was anything more than med rare probably hopeless I stay rare on that cut.
 
Hard to picture the wax. Curious if the finish holds up better with wax.

I’m at Walmart my parents favorite store lol. It’s such a weird feeling this time though because they have everything moved around due to store renovations. And construction workers everywhere. I’m trying to not spend any money we will see if I’m successful or not lol. I’m saving up for that trip me and my buddy are doing.

The Walmart in Oak Harbor was a complete renosaster.
