What should one use to keep a Soft Tri-Fold Tonneau Cover in good condition and looking good?

Ive had pretty good luck with 303 brand aerospace protectant.

Nope. I used 303 as well. 303 is not a good cleaner, but it is an excellent protectant. I'm sure you could use Megs Ultimate Protectant as well. It would be more difficult to apply, but it does stand up well. Really, any vinyl protectant will work, but probably not as well as 303.
I've been using Autoglym Vinyl & Rubber Care and have no issues but wondered if I should be using something else.

Autoglym should do you well. They are very high-quality products. I wouldn't spend $ on anything else if you already have Autoglym on the shelf.
Autogeek carries a Wolfsteins product marketed specifically for tonneau covers, but I have not read that it performs miracles compared to other products:
