Pabs. Sure sounds like you have all the right equipment. Hold on to it. I'm sure you'll use it again. I'm really glad I kept mine after contemplating many times of selling it off. It's funny, I got into lubes as an alternative to brewing since It took less time, was just as neurotically involving, and is still lots of fun.
I miss my glass carboy fermentors. Several years back I replaced them with 10 gal. stainless soda kegs (tube trimmed to let the yeast and trub settle). This setup significantly improved the shelf life and stability of my beer since it never sees air. Transfers from fermentor to 5-gal soda keg are done by pushing the beer out with CO2, and into to a keg purged with gas. It's a great setup, except I can't see the fermentation. What a beautiful sight, and this is what I miss.
I’m convinced we are supposed to drink beer, wine, and other naturally fermented things, so, I don’t worry about those carbs. To **** with them!
