I pop the top off and there is a big air cavity where no grease was pushed up to replace what I was pumping out.

Does that happen in all weather or just the extreme cold?

I use Valvoline Durablend in a $50 Alemite grease gun and have no problems.

I couldn't get it to work at all when it was down in the 30s, now that it's in the 70s it will work, but I have to repack the grease about 3 times greasing my truck. About every 20 pumps roughly.

Well I have never think that great product exist.
those that are good in one application or test case are not good for other.

Direct to your question.
RP reports cone penetration 285mm which is on the low grade side.
NLGI 2 is specified 280mm +-10%. NLGI 1 is 325mm
Good low temperature greses reports their low temperature torque ASTM D 1478 normaly at t=-40ºC but some good low temp greses gives report at t=-50ºC. Another parameter is US Mobility, AM-S 1390, -18ºC, gms/min. for low temperature application i use Mobilith SHC greases, but they are not heavily overloaded with EP aditives as RP ultra performace grease. last but not at least they are lithim complex

Bob explains the pro's and cons of the different greases.

The good thing about Aluminium Complex grease being hard to pump is that it does create a barrier for ingress on the outer edge of the greased area to reduce contaminants cycling through the joint.
