I made something I never thought I would.
A sweet meatball recipe which arrived in my inbox uninvited.
Ingredients
• 2 1/2 pounds ground beef
• 1/2 cup onion, minced
• 1 egg
• 1 cup breadcrumbs
• 2 tablespoons salt
• 1/2 teaspoon ground ginger
• 1/2 cup milk
• 1 1/2 tablespoons oil
• 2 1/2 tablespoons cornstarch
• 3/4 cup brown sugar, packed
• 1/2 cup vinegar
• 2 tablespoons soy sauce
• 2 (13.5-ounce) cans pineapple tidbits, drained and syrup reserved
• 1/2 cup green pepper, chopped
Directions
Step 1 -Preheat the oven to low heat.
Step 2 -Combine the beef, onion, egg, breadcrumbs, salt, ginger, milk in a large bowl.
Step 3 -Shape the mixture into ~24 meatballs.
Step 4 -Cook the meatballs in the shortening until browned and cooked through at 145 degrees F internally, about 5 minutes per side.
Step 5 -Place the meatballs on a baking sheet and place them in the oven to keep warm.
Step 6 -Drain the fat from the skillet.
Step 7- In a bowl, mix the cornstarch, brown sugar, vinegar, soy sauce, the reserved pineapple syrup until the mixture is smooth.
Step 8 -Pour the sauce mixture into the skillet - cook it over medium heat, stirring frequently, cook/boil until the mixture thickens.
Step 9 -Continue to boil and stir the sauce for 1 minute.
Step 10 -Add half the meatballs, pineapple bits, green pepper to the sauce and heat through completely.
Step 11 -Serve atop salad leaves.

I keep half the meatballs aside as the recipe makes only so much sauce.
Serving on rice or noodles is an option. Consider upping the sauce ingredients for volume.
I make different things to entertain myself and the bride. It's good to do.
