Well, I have been wanting to try a fermented pickle type set-up lately. I did some research and came up with the following:
Large gallon Jar, place garlic cloves, onion, grape leaves, in the bottom of jar. Cut ends off pickles, cris-cross ends and stack upright in jar. Fill half way with fresh water. In sauce pan, combine salt, apple cider vinegar, mustard seed, celery seed, red pepper, horse radish, pepper-corn, and cloves. Bring this brine to boil, add a few bay leaves to mixture and poor over pickles filling the jar. Place a piece of bread on top and cover with lid loose. Wait three weeks at room temp and try them out.
Anyone ferment like this before? and what type of pickle fermentation have you done?
