Penne alla Boscaiola

I had a hankering for carbs last night. It was rather windy and cold and I thought my favorite pasta dish would hit the spot. It did. If you have never had penne alla boscaiola you don't know what you've been missing. Look up some recipes and get cooking. It's basically penne in a creamy sauce with tomatoes, white wine, porcini mushrooms, onions and garlic, chopped smoked bacon, parmesan, black pepper, thyme, and parsley. Molto delicioso!
 
I make something similar.

I cook the pasta - I use Bucatini pasta - put it in a baking dish. Add breaded chicken like what you use for chicken parmigiana, but when you cook the chicken in the pan, when the second side is cooked, splash some Marsala wine on it and briefly cook it on both sides to drive the alcohol content out. For the sauce I use sun dried tomatoes and add more Marsala wine to the sauce. Once the sauce is done, I pour it over the chicken and pasta, put some of your favorite cheese on it, and bake it for 30 minutes. Comes out great.
