Margarine is of course not illegal in Wisconsin, however it IS illegal for a restaurant to serve only margarine to a table. If they bring both margarine and butter, fine. But if only one item it must be butter.

Many if not most restaurants here only bring butter. I rarely see margarine at the table.

Another bit of trivia about this state. In Wisconsin, if you are with your parents what is the drinking age?

I used to use margarine - but the stuff is high in trans fats and water. Butter and/or Smart Balance is a staple in my fridge.

Back in my bakery days, we used a "margarine" in our danish and puff pastry dough which was more or less a water/hydrogenated oil emulsion, no dairy.
 
we only buy margarine for one cake recipe my wife makes; it just doesn't come out right w/ butter. but for everything else, it's butter. unsalted for baking, salted for sunday morning fried eggs.
