Residential stoves are just that, residential. Even the commercial look ones. True commercial ranges are built with zero doo dads and with giant surface burners for high-speed cooking to turn out meals in restaurants. And true commercial units require commercial venting and in most cases fire suppression to satisfy insurance companies and local codes. I've seen commercial units in homes without proper venting BTW. Hope they never have a kitchen fire.
There are no simple high end residential ranges. Surveys and marketing rule the roost today in all appliances. Look at refrigerators with knock on the window to see in features. Too lazy to open the door? More electronics complexity but it was a hit on the survey wish list.
