Oil changes for Camaro driven 500mi/yr

Are you taking it on longer runs when it does come out or is that a bunch of short trips?

If it’s always brought up to full operating temperature for a while when it comes out, then I would suggest changing the oil every two years. If it’s short tripped then do it once a year.

This is probably my opinion also. I'll also add that if you decide on once a year OCIs due to short trips, change your oil in the Spring.
 
As was mentioned, if you’re getting the oil up to normal operating temperature when you drive it, you can go quite a long time.

If that’s the case, I’d probably use the release of the next API or ILSAC standard as my reminder.
 
As previously mentioned, if it’s long trips where it gets up to temp, I would every two years. If it’s short trips, I would every year. Regardless, I would prioritize an oil filter with a silicone annti-drain back valve and treating the fuel prior to storage.
 
Sounds like my motorcycle. I changed the oil recently after a gap of about three years. I've restored a handful of old bikes, rebuilding the engines, and I've never seen any internal damage or rust in any of them, after storage of decades sometimes.
