Doing an oil change tomorrow on a friends truck, takes 6 quarts. He picked up 6 quarts of Mobil 1 AFE 0W30, a 5 quart jug which is SN Plus and a quart which is SP. Will it hurt to mix the two?

I'd check and prepare the fire extinguisher just in case. You never know!
It won't hurt anything to mix the two.
I always shop price/rebates for oil from Valvoline, Mobil, the last year RGT, Rotella, Delvac, various branded Warren Oils every oil change there is always some left over whether it is the end on a 12 quart box or the a 5 quart or a quart. I have an empty 5 gallon jug that I throw all the left over oil in from different and when I get a enough for an oil change that goes in one of the older vehicles.
Never had any problems been mixing oil.
Only engine I lost was after a PYB oil change many years back. It was a ford 300 inline six with 50K miles. Few days after the oil change it spun a bearing and seized l. I stay away from that stuff. Coincidence maybe but In the 70s and 80s all kinds of horror stories about it. Granted it is probably much better now.
