Apparent viscosity is not the same as measured viscosity, close but what you see is RT "flowability". Take the oil that you are used to and SSO up to 100°C for example, there probably is little difference in apparent and measured viscosity. Take both oil down to -30°F and what do you think? Decent difference. Take them to +200°C? Decent difference.
