Well yes regular Tabasco has vinegar and is not at all appropriate for certain foods. You should try some of the "new" Tabasco varieties.
Frankly, guys, I HATE sriracha. It's way fake like. The color, the taste, blecch. It has sulfites! For Asian foods I use sambal olek or Chinese chile paste or chile oil.

I switch between tapatio cholula, tabasco, and frank's red hot
Louisiana "The Original" hot sauce. A little more heat, and a lot more flavor than Tabasco. Tried Crystal, Texas Pete, and many others, and this is my favorite "general purpose" hot sauce.
I've got tons of others that I've accumulated as experiments, received as gifts, etc. Some are boring, some deadly.
My favorite hot sauce for Mexican dishes is Valentina extra hot. More flavorful than Tapatio or Cholula.

The sriracha sauce with the rooster on the bottle and green top is made in California. It is an American-invented product based upon Asian recipes. I use it more than ketchup. I also like Tabasco chipotle, and Louisiana brand habanero as my go-to hot sauces. Nothing wrong with the others since it's all a matter or personal taste. Ah, for the simple days when there was regular Tabasco and Pace picante sauce (ONE variety). Now, you suffer brain freeze in the hot sauce aisle.

But it still has sulfites. Yuck.
Being i'm from Louisiana I prefer Crystal hot sauce.When I want my hot sauce on fire I use Crystal Extra Hot.IMO,Tabasco has too much vinegar in it.
I've been eating Gator Hammock Gator Sauce lately. Not overly hot and great flavor.

Marie Sharp's "No Wimps Allowed" is pretty interesting. And by interesting I mean two drops on a hamburger almost ruined it.
My boss brought me back some from Belize when he was there. One of the more wicked hot sauces in my collection.
I love Louisiana original on microwave pork rinds. Hot crispy spicy bacon-y goodness.

At a bbq cookout I attended back in the 90s,a guy brought some hot sauce that would actually make you cry by just eating one drop.Of course you always have that one guy that has a big "S" on his chest and nothing hurts him.He put about 10-12 drops on his hamburger.After he took a bite we thought someone was going to have to call 911! Does anyone remember when you were in basic training in the military and had to remove your mask in the gas chamber? Same thing happened to him. After numerous pieces of bread and apples he was ok.
