I saw earlier in the thread that someone drains (or vacs) the old fluid out of the master cylinder, doesn't that introduce air? or can you vac out resvor safely??

Its just a reservoir sump. As long as you don't pump the brake pedal with no fluid in the reservoir, you can siphon it out and refill as needed. No air is introduced via a reservoir siphon/refill which should be done prior to starting any bleed.
