My F-150 in my sig calls for Mercon ATF for the transfer case from the owners manual. Would it be better use to Mercon V instead since the trans specs Mercon V already ?

If your t-case has clutches... which many do not. An old school chain drive t-case with a lever can get by nicely with a variety of lubricants and isn't to picky. When you get into AFWD and traction control, where clutches are involved, then you may have special needs.

We've used Mobil 1 ATF in our Expedition T-cases, which are likely the same unit. They are clutched. I've been running it for a little over 100,000Km at this point in mine.

Id probably go this route instead of plain atf

I have about 2 qts Castrol Dex/Merc left over from a previous vehicle from about 3 years ago. T-case specs 2 quarts. Would it be safe to use b/c of its age? It's no big deal to buy something else, though.
