Do some oils dry-out better than others?

I had a milky looking oil on the dipstick this morning. After about an hour of driving around I checked it again and its clear as a bell. It's supertech hd30. I've run other oils that don't clear up. I guess some additives bind with the water?

I'm going to have to run the car every day to keep the oil dry.
 
Sounds like you have a small coolant leak, or else you're driving repeated short distances in very humid atmosphere. The PCV system could be faulty too and not evacuating the crankcase very effectively.
 
A monograde like the HD30 you are using should heat up quicker than a multigrade like 5w30. Maybe that's the difference.

Cracked block. At the bottom of the bores.

I'm going to grout the water jacket an inch or 2 for a permanent fix.
