With Winter coming... (At least up here) does anyone have any really good Crock Pot recipes they would like to share?

I bought a book that has a bunch of tasty recipes that are super easy but I'm getting tired of them and wanted to try something new.

Also does anyone have a Mac & Cheese recipe for the Crock Pot, Paula Dean (sp?) has one but I can't seem to find it on the web and I wanted to try hers...

Made one last night as a matter of fact! 1 large beef roast, 2 cans of potatoes, a bag or two of mini carrots, one diced onion, a few cloves of garlic, salt/pepper, and a can or two of chopped tomatoes.

Cook the heck out of it. Start early and let it go all day. Makes the most tender tomato based beef stew you'll ever eat.

Oh, flower the roast and sear it in a pan before sticking it in.

Easy as pie and will make 3 meals.

I went to the Food Network website and searched for her... Didn't do a Google Search asking it to look on the food network... To be honest I didn't try as hard as I could have...

Here's one we like.

Crock-pot cheesy chicken

-4 chicken breasts
-1 1/4 cup white wine (1 and 1/4 cup)
-1 can Campbells Golden mushroom soup
-1 packet dry italian dressing mix
-1 brick cream cheese (low fat is ok)
-optional add mushrooms
-serve over rice

Sounds tasty...but what temp?? How long??

Crocks pots are low, medium, and high usually, and most recipes tell you to cook it for the entire day low and slow.
 
I just scored a free crock pot from a woman @ work. I've been doing the basic stewed beef, potato and carrot faire, but I might have to check the chicken one out. My eating rule is preparation for a meal has to take less time than the meal itself. These fit the bill...
 
You should try making a beer cheese stew in you're crack pot!!! Basically you make a beer soup but add lot's off veggitables and cubed meat and cheese to make it a more hearty meal. Thicken the stew with crumbled Rhye bread!! Its very good on chili days and warm's you Up!!

Crock pots are awesome because you can throw the stuff in and it does all the work. You set it, go to work and come home to a great meal.

We make an awesome chili in ours and also buy some of the meals in a container where you just dump it into your pot frozen, add water turn on and its good to go when you come home from work.

Makes winter enjoyable.

Take 750-1,000 grammes of stewing steak, dice, and place in crock pot.

Add 3 tablespoons of tomato paste, a tablespoon and a half of your favourite yeast extract, some pepper, and a teaspoon of garlic powder.

Mix these and the beef up until you can pat them down well into the base of the crockpot.

Add a layer of coarsely chopped onion,
a layer of coarsely chopped celery,
a chopped swede
a chopped parsnip
a layer of chopped potato (optional, see below)
a couple of chopped carrots
Some chopped green beans

Some dried herbs (rosemary and thyme)

Tip in a 700(ish) gramme tin of crushed tomatoes, and smooth it over the top of the pile.

Then pour in a 375ml stubby of guiness (or other stout).

Cook all day...mix well before the last 2 hours of cooking. The beef mixed with tomato paste seems to make the beef more tender.

optional - dumplings
if we aren't having dumplings, we include potatoes as above.

Dumplings are
1-1/2 cups of self raising stone ground wholemeal flour.
1tbsp butter, worked through the flour to make "breadcumbs"
Enough milk to make a dough sticker than scone dough.

form into 6 balls, and add on top of the stew an hour and a half before serving.


Serves 4 for dinner, and 2-4 work lunches.
