Can oil capacity in owners manual be wrong?

Nobody yet has mentioned another likely possibility that I've experienced.

I noticed when several of my jugs were lined up side by side, there was about 3/4 inch difference between fill levels, i.e. don't bet your life that a jug contains the amount of contents stated on the label.
 
Another factor is also going to be the amount of time you let the old oil drain. When you go to a quick lube, they are only going to let it drain for 3 or 4 minutes, but I'm sure most of us on here let it drain much longer, some people (like myself) have been known to let it drain for as long as two hours. So if you're going to let it drain longer, obviously it will take a little bit more oil to bring it up to the full level compared to if you'd only drained it for a few minutes. Also, if you are performing the oil change on a slight incline you'll get a different amount of oil come out as well.
 
My escape calls for 5.5 qts it always takes 6 qts to get to full line so in goes 6 qts 164,000 no oil related problems.
 
I have a 2010 Mitsubishi Lancer Ralliart

I was able to buy a 5L jug of Castrol Edge with SPT at Autozone. My car calls for 5.4 quarts, but with 5.28 quarts it sits over the full mark.

The next oil change, I bought 5qt a container of Castrol Edge gold, and the oil level still is over the max mark on the dipstick.

I don't understand why this is.

My local garage mechanic poured in quart bottle for less than 30 seconds, he throw away the bottle (after re-cap) even when the oil is still pouring out in small stream, I think the remaining oil in the bottle could be as much as 1/20 to 1/10 quarts.
