Best cheese for burgers

Looking for ideas for a good cheese for burgers. Obviously Swiss, American, cheddar, blue all work well, but looking for something else.

We like our burger recipe which is flavorful, and has onions in it. A hard semi-sharp cheese would go well, possibly one of the non-cow varieties... But I don't know enough about cheeses. Suggestions?
 
I strongly prefer Cheddar, there is a local restaurant that has a "British Burger". I cannot remember everything on it but it does have tons of cheddar. Love that burger.
 
Very sharp cheddar. If you want spice, adding Jalepenos separately is best. But I usually end up using whatever is in the fridge. Philadelphia Cream works in pinch.

Feta taste good, but it is like playing Russian roulette with your gut. Feta can cause severe upset stomach or worse, not every time, but at random. It just aint worth it.

Cabot select is pretty good. I like to fry onions & shrooms, maybe peppers seperately, put on top of meat, then melt the cheese on top. If I have to pan fry them (shudder) an appropriately applied lid keeps the heat in well enough to melt the cheese just right so it oozes down and locks the other condiments in place.
 
I like Provolone sometimes. If you want some good cheese try ordering it from Wisconsin in the cool months. At Cedar Grove Cheese Factory in Plain Wisconsin they make some super hot Monterey Jack cheese with jalapeno peppers and a variety of other cheeses. The Cheese Maker in Plain Wisconsin also offers a nice variety of cheese. I have bought it there and ordered it. I have never been disappointed with the quality. Check out their website for a full list and description of the products they carry. Right now I have about 6 pkg. bought in December and still very good.
 
Pepper Jack or Sharp Cheddar.

most cheeses are good on a burger, I suggest try a different one each week!
Cooper Sharp is a good one, it might have regional availability though. it's like a sharp white american.
I'm a big fan of deli sliced yellow american.
 
Lately our local trader Joes has raw milk cheddar and swiss cheeses. These go very well with anything - because they are from raw milk, they are aged and have a great sharp flavor.

I agree, real Gorgonzola is awesome on a burger. I've also formed burger patties around the blue cheese and grilled them that way. Holy goodness!

I also second the votes for a good pepper jack cheese.

For a different, but planer treat try a tasty Gouda (not the lousy supermarket kind)
